Breakfast Quesadilla

You can't go wrong when choosing vegetarian quesadilla recipes, as there are so many nutritious and tasty ones available to pick from. You can have a different veggie quesadilla every night of the week and never be bored.

1. Breakfast Egg & Veggie Quesadillas

Choosing a vegetarian breakfast quesadilla will get your morning started out right. It's the perfect blend of protein, veggies, and healthy fats.

Ingredients

  • 3 eggs
  • Salt to taste
  • 1/2 cup cheddar cheese
  • 1/4 cup avocados, cubed
  • 1/4 cup diced tomatoes
  • 1 green onion, sliced
  • 2 large tortillas
  • Salsa and sour cream (optional toppings)

Directions

  1. Whisk eggs together in small bowl, and coat skillet with cooking spray.
  2. Cook eggs over medium heat until set; add salt to taste.
  3. Place tortillas on a griddle, and top of each half with eggs, cheese, avocado, tomatoes and onion.
  4. Fold over each tortilla and cooked on low heat for 1 to 2 minutes. Flip the tortillas over and cook an additional 1 to 2 minutes or until cheese melts.
  5. Serve quesadillas with salsa and sour cream, if desired.

2. Black Bean and Corn Quesadillas

Perfect for a lunch, dinner or appetizer, this vegetarian quesadilla recipe will make your mouth water.

Ingredients

  • black bean quesadilla
    1/2 cup corn
  • 1/4 cup red peppers, sliced
  • 1/2 cup black beans
  • 1/2 cup pepper jack cheese
  • 1/4 cup onion, diced
  • 1 tablespoon canola oil
  • 1/2 clove garlic
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 large tortillas

Directions

  1. Sauté corn, peppers, black beans, onion, garlic, salt, and pepper in canola oil in a skillet until the corn begins to brown.
  2. Place the mixture onto half of each tortilla, add cheese, and fold over.
  3. Coat a skillet with cooking spray.
  4. Heat tortillas on skillet over medium-low heat, until tortillas begin to brown and cheese melts (about 1 to 2 minutes on each side).
  5. Cut each tortilla into fourths and serve.

3. Pumpkin Quesadillas

What better way to get in the holiday spirit than by serving pumpkin quesadillas at your next family gathering.

Ingredients

  • Pumpkin Tortilla
    2 cups pumpkin puree
  • 1 1/2 tablespoons finely chopped jalapenos
  • 3/4 cup crumbled feta cheese
  • 3/4 cup chopped fresh cilantro
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 large flour tortillas

Directions

  1. Mix pumpkin with jalapenos, salt, and pepper in a small bowl.
  2. Place mixture on half of each tortilla and top with feta and cilantro.
  3. Fold tortillas in half, and cook in skillet over medium heat for about 1 minute per side (until tortilla begins to brown).
  4. Cut into triangle portions and serve!
